Maraq (Meat or vegetable soup)

Ingredients:

  • 1 lb beef, chicken, or mixed vegetables (e.g., carrots, zucchini, potatoes)
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 2 tbsp vegetable oil
  • 4 cups water or broth
  • Salt and pepper to taste
  • Optional: Fresh cilantro for garnish

Preparation:

  • Sauté: Heat oil in a pot over medium heat. Sauté onion until soft. Add tomatoes, coriander, and cumin; cook 3 minutes.
  • Cook soup: Add meat or vegetables, water or broth, salt, and pepper. Bring to a boil, then simmer 20-25 minutes until meat is tender or vegetables are soft.
  • Serve: Garnish with cilantro and serve with canjeero or bariis.
