Malawah (Malawax) – Thin, layered flatbread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup water (adjust as needed)
  • 1 tsp salt
  • 2 tbsp vegetable oil (plus extra for frying)
  • Optional: Honey, sugar, or butter for serving

Preparation:

  • Make dough: In a bowl, mix flour and salt. Gradually add water, stirring until a soft, slightly sticky dough forms. Knead for 5 minutes until smooth.
  • Rest dough: Cover and let rest for 10 minutes.
  • Shape: Divide dough into 4 balls. Roll each ball into a thin circle (about 8 inches).
  • Cook: Heat a skillet over medium heat with 1 tsp oil. Cook each flatbread for 1-2 minutes per side until golden and slightly crispy. Brush lightly with oil while cooking for extra flakiness.
  • Serve: Serve warm with honey, sugar, or butter, or pair with savory dishes like suqaar.
