Hilib suqaar (Beef and vegetable sauté)

A quick stir-fry of diced beef with vegetables and xawaash, served with rice or flatbread. It’s a flavorful, everyday dish.

Ingredients:

  • 1 lb (450g) beef, thinly sliced
  • 1 medium onion, sliced
  • 1 green bell pepper, sliced
  • 1 medium tomato, diced
  • 2 garlic cloves, minced
  • 1 tbsp xawaash (or mix: 2 tsp cumin, ½ tsp coriander, ¼ tsp black pepper, pinch of turmeric)
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • Fresh cilantro, for garnish

Preparation (25 minutes):

  1. Cook beef: Heat oil in a large pan over medium-high heat. Add beef and cook until browned (5 minutes). Remove and set aside.
  2. Sauté vegetables: In the same pan, cook onion and bell pepper until soft (5 minutes). Add garlic and tomato; cook for 3 minutes.
  3. Combine: Stir in xawaash and salt. Return beef to the pan. Cook for 5 minutes until flavors meld.
  4. Serve: Garnish with cilantro. Serve with rice or sabaayad.
