A nutritious stew of spinach cooked with onions, tomatoes, and mild spices, often served with rice or flatbread like muufo.
Ingredients:
- 1 lb (450g) fresh spinach, washed and chopped
- 1 medium onion, chopped
- 2 medium tomatoes, diced
- 2 garlic cloves, minced
- 1 tsp xawaash (or mix: 1 tsp cumin, ¼ tsp coriander, pinch of turmeric)
- 2 tbsp vegetable oil
- 1 tsp salt
- ½ cup water
Preparation (25 minutes):
- Sauté base: Heat oil in a large pan over medium heat. Cook onion until soft (5 minutes). Add garlic and cook for 1 minute.
- Add spices and tomatoes: Stir in xawaash and tomatoes. Cook until tomatoes soften (5 minutes).
- Cook spinach: Add spinach, salt, and water. Stir, cover, and simmer for 10 minutes until spinach is tender.
- Serve: Serve hot with rice or muufo.
