A quick, flavorful stir-fry of diced chicken with vegetables and xawaash, similar to hilib suqaar but with chicken.
Ingredients
- 1 lb (450g) boneless chicken breast, thinly sliced
- 1 medium onion, sliced
- 1 green bell pepper, sliced
- 1 medium tomato, diced
- 2 garlic cloves, minced
- 1 tbsp xawaash (or mix: 2 tsp cumin, ½ tsp coriander, ¼ tsp black pepper, pinch of turmeric)
- 2 tbsp vegetable oil
- 1 tsp salt
- Fresh cilantro, for garnish
Preparation (25 minutes):
- Cook chicken: Heat oil in a large pan over medium-high heat. Add chicken and cook until browned (5 minutes). Remove and set aside.
- Sauté vegetables: In the same pan, cook onion and bell pepper until soft (5 minutes). Add garlic and tomato; cook for 3 minutes.
- Combine: Stir in xawaash and salt. Return chicken to the pan. Cook for 5 minutes until flavors meld.
- Serve: Garnish with cilantro. Serve with rice or muufo.
