Bariis – Somali spiced rice

Ingredients

  • 1 cup basmati rice, rinsed
  • 2 cups water or chicken broth
  • 1 small onion, chopped
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • 2 tbsp vegetable oil
  • Salt to taste
  • Optional: ¼ cup raisins or chopped carrots

Preparation

  • Sauté: Heat oil in a pot over medium heat. Sauté onion until golden. Add cumin and cinnamon; cook 1 minute.
  • Cook Rice: Add rice, water or broth, salt, and raisins or carrots (if using). Bring to a boil, then reduce to low, cover, and simmer 15 minutes until rice is fluffy.
  • Serve: Fluff with a fork and serve with suqaar or vegetables.
