Bariis iskukaris (Somali pilaf)

Ingredients:

  • 1 ½ cups basmati rice, rinsed
  • 2 ½ cups chicken broth or water
  • 1 lb beef, chicken, or goat, cubed
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ¼ cup raisins (optional)
  • Salt and pepper to taste

Preparation:

  • Cook meat: Heat oil in a large pot over medium heat. Add meat, season with salt and pepper, and brown for 5-7 minutes. Remove and set aside.
  • Sauté: In the same pot, sauté onion until golden. Add tomatoes, cumin, coriander, and cinnamon. Cook 3 minutes until fragrant.
  • Cook rice: Add rice, broth, raisins (if using), and browned meat. Bring to a boil, then reduce to low, cover, and simmer for 15-20 minutes until rice is fluffy.
  • Serve: Fluff with a fork and serve with a side of salad or maraq.
